How many of these mental disorders are actually demonically infliuenced? If it were as simple a thing as speking the name of Jesus in faith and curing them? Does it not seem worth investigation? Yet most will reject the idea out of hand.

I bet at least one relative has at one point said something like "Jesus, save him/her", about almost every single mentally ill person, at least in the US.
I asked anyone and everyone to save my father-in-law when he had a heart-attack. I don't really believe, but at that moment my request was utterly sincere.
And if that doesn't work, the person with the so-called mental disorder is clearly a witch who invited possession. The only treatment for that is to burn them at the stake.

None of them. All (or at least most) permanent mental disorders are caused by brain damage (disorders NOT caused by brain damage can likely be fixed through psychiatric help).
A good example would be anti-NMDA receptor encephalitis. It causes symptoms similar to various claims of demonic possession. However, if it was demonic possession, then that would make it incurable. Since it is curable, one can conclude that it is not demonic in nature. Also it is potentially fatal (supposedly, Satan cannot kill people unless God lets him; see book of Job).
I work at a psychiatric hospital. Our chaplain is a woman of deep and sincere faith. She prays with and over anyone who wants her to, as well as talking to them about their troubles, and she invites in ministers of other religions as necessary. This has never resulted in total spontaneous remission, though it is a comfort to many, a connection with their community and often something that helps them to make sense of their suffering.
In other words, yes spirituality can help. No, this does not mean there are demons involved, you condescending fuck
Njorddammit, LaMontre. If it were that easy, don't you think mental illness would have been completely eradicated during the Middle Ages? Hell, if prayers and faith were that powerful, wouldn't the church have been completely unstoppable? Kind of hard to disbelieve a deity whose priests can dispense extra-strength God Thorazine at will and turn infidels into pillars of salt!

A few posts above shows how far these people think these things through. Religious doctors, visiting pastors making their rounds, some health institutions are church connected, family of the afflicted, etc.
Not one documented case of instantaneous recover from dementia by speaking the name of Jesus in faith, pills can work sometimes though.
